Vegetarian Patties, Tomato Salsa, and Egg n Lettuce Salad
2 potatoes, 1 onion, 1 carrot, 6 small mushrooms, 3-4 cloves of garlic, 1 cup of flour, 1-2 eggs, 150g of MoPian (breadcrumbs), salt and pepper
First grate the potatoes, onion, and carrot. Then chop the mushrooms and garlic finely and add to the mix. Add 1-2 eggs, salt and pepper, and mix. Slowly add flour until the mixture has reached the right consistency, that is, not too dry but not too wet. Make into small balls and then roll in finely chopped MoPian. MoPian is a Chinese snack that looks a lot like toasted bread. It was the closest thing I could find to breadcrumbs and worked very nicely! (Of course use breadcrumbs if you have them)
Fry on a low heat in a shallow pan with a small amount of oil for around 3-5minutes each side, or until crispy on the outside.
1-2 dozen cherry tomatoes, half a red onion, 3 tablespoons of white vinegar, 1 teaspoon of sugar, salt
Chop the red onion very finely and cover with white vinegar. I used Qiannianjing Shanxi White Vinegar. Add finely chopped cherry tomatoes, sugar, and salt, and mix well.
Egg n Lettuce Salad
Half an iceberg lettuce, 2 hard boiled eggs, 1 cucumber, 3 tablespoons of mayonnaise, salt
Boil 2 eggs and stand to cool. Wash and break half an iceberg lettuce into small pieces. Add a diced cucumber and the boiled egg yolks. Mix in mayonnaise until the salad has a creamy consistency. Add salt and sliced boiled egg white.
I suggest you use some sweet chili sauce such as Li Kim Kee Thai Sweet Chili Sauce to put over the top of the patties.
Cover the patties with Tomato Salsa and serve with the Egg n Lettuce Salad.
