Waldorf Chicken Salad

1 tablespoon champagne vinegar
2 teaspoons Dijon mustard
3 tablespoons extra-virgin olive oil
2 tablespoons finely chopped shallot
1 tablespoon finely chopped fresh tarragon
2 tablespoons mayonnaise
2 1/2 cups shredded cooked chicken
3/4 cup finely diced apple with peel
1/4 cup dried cranberries
1/2 cup finely chopped celery

Accompaniments: toasted whole grain bread or salad greens
Sea salt & pepper; to taste

Whisk together vinegar and mustard in a medium bowl. Whisk in oil in a slow stream until thickened. Stir in shallot, tarragon and mayonnaise.

Fold in chicken, apple, cranberries and celery. Season with salt and pepper. Serve salad on toasted whole grain bread or greens.
