WEDDING SALAD
1 (8 oz.) container Cool Whip
1 (16 oz.) carton sour cream
1 small box orange Jello
1/2 of bag (10.5 oz.) mini marshmallows
1 (8 oz.) can crushed pineapple, drained well
1 (11 oz.) can mandarin oranges, drained well (save juice)
1 (6 oz.) can frozen orange juice concentrate, thawed
Combine Cool Whip and sour cream until smooth. Stir in Jello until well mixed. Blend in marshmallows. Add pineapple and mandarin oranges. Stir gently until well combined. Add frozen juice concentrate. Refrigerate a few hours or overnight. Test consistency. If too thick, add some of the mandarin orange juice. Serves 12.
