I have purchased your America’s Most Famous Recipes. I am very pleased with the books, very impressed. Thank you. My problem is very small: What is Liquid Smoke? i live in Cheshire, England and we haven’t hard of it. What can I use instead, please? We can get Red Hot Chilli Sauce, Tabasco. I must admit we are now able to buy a lot more US foods. I also shop at Costco so am able to buy certain US items. Thank you in advance.

If you have a shop in your area, that does freshly smoked fish and/or meat* you can ask them, if they make liquid smoke. That’s how I got mine. I have no idea how they make it, but it works
Alternatively they may be able to make smoke-salt?
*) - sorry, I have no idea what that’s called in English - in Denmark we just call it a Smokery …
