Whipped Cream Dressing
2/3 cup sugar
2 tbsp flour
2 eggs, beaten
2 tbsp salad oil
3 tbsp lemon juice
4 tbsp orange juice
1 cup pineapple juice
1/2 cup heavy cream, whipped
Combine sugar and flour in top of double boiler; add remaining ingredients except cream and cook until thickened, stirring constantly.
When cool, fold in whipped cream. Makes 2 cups.
GINGER - Add 3 tsp chopped crystallized ginger.
