White Chicken Chili

White Chicken Chili

1 Tbsp. olive oil
1 small onion, finely chopped
1 Tbsp. minced garlic
1 medium red bell pepper, finely chopped
2 15 oz. cans white beans, undrained
1 4 oz. can chopped green chilies
1/2 tsp. ground chumin
1 tsp. chili powder
1 14.5 oz. can low sodium chicken broth
1/2 lb. roasted chicken breast meat, cut into 1/2 cubes
2 Tbsp. lime juice
2 Tbsp. cilantro, minced

In large pot heat the olive oil over medium heat. Add the onion, garlic and red pepper. Sauté for 5 minutes. Stir the white beans, chilles, cumin, chili powder and broth. Bring to a boil, reduce the heat and simmer 10 minutes. Stir in the chicken and simmer 5 minutes. Stir in the lime juice and cilantro. Garnish each serving of chili with a Tbsp. of salsa if desired.
