Whole-Wheat and Fruit Bread

Hint: Keep a can of frozen apple juice concentrate on hand in the freezer and scoop out what you need for a recipe like this. Cover the top of the can with foil held by an elastic band.

Serving Size: 1 slice or 1 muffin


raisins - 1/2 cup
apple juice concentrate 1/4 cup
egg substitute - 1/4 cup
reduced-calorie corn oil - 1/4 cup
ripe banana, sliced - 1
pure vanilla extract - 1 tsp
whole-wheat flour - 1 cup
cinnamon - 2 tsp
baking powder - 1/2 tsp
baking soda - 1/2 tsp
salt - 1/4 tsp
chopped nuts - 1/4 cup

  1. Heat raisins in apple juice for 3 minutes over high heat or 1 minute in the microwave oven.

  2. Pour into blender and puree.

  3. Add egg substitute, oil, banana, and vanilla and blend.

  4. Mix dry ingredients in a bowl and add blender ingredients. Stir lightly.

  5. Add nuts if you are using them.

  6. Spoon into loaf fan or muffin cups coated with nonstick cooking spray. Bake at 350 degrees for 40-45 minutes for a loaf or 20-25 minutes for muffins.

  7. After cooling, cut loaf inton 12 slices.
