Whole-Wheat Banana Bread
Try this when you have a lot of very ripe bananas on hand. These are wonderful anytime, but if you eat them warm from the oven, they make a wonderful dessert.

Serving Size: 1 slice
Ingredients:
honey - 2 tbsp
reduced-fat vegetable oil - 3 tbsp
vanilla - 1 tsp
medium banana, mashed - 4
lemon juice - 2 tbsp
whole-wheat flour - 2 cups
baking powder - 2 tsp
baking soda - 2 tsp
raisins 1/2 cup —
walnuts, roughly chopped or 1/2 cup of Grape-Nuts - 1/2 cup

Mix honey, oil, and vanilla.

Add bananas and lemon juice. Mix well.

Sift flour, baking powder, and baking soda into banana mixture. Stir.

Fold in raisins and nuts.

Bake in 2 loaf pans each 7-1/2x3-3/4x2-1/4 inches at 350 degrees F for 35-40 minutes (325 degrees F for black pans).

Cut each loaf into 12 slices.
