Our most recent favorite way to enjoy our spinach!
1 T. olive oil
3 T. minced shallot
1 pound fresh baby spinach
2 t. grated lemon peel
1 T. lemon juice
salt & pepper
In a nonreactive skillet heat the oil. Add the shallots and the spinach. Cook about 2 minutes, stir, sprinkle with lemon zest and juice. Season to taste with salt & pepper.
Serves 2 - 6 depending upon how much you like spinach.
