Zucchini Pie

Zucchini Pie
3 cups. zucchini diced in small pieces with skin and put in food processer to shred.
1 small chopped onion
4 eggs (beat)
1 Tablespoon. parsley
1/2 cup oil
1/2 teaspoon salt
1 cup bisquick
1/2 cup grated sharp cheese

Mix all together and pour into greased 13 x 9 inch pan. Bake for 30 minutes or until done in a 350 degree oven - great for lunch or cut up in small pieces and serve with afternoon tea along with finger sandwiches.

Great recipe Sky! I love zucchini, and haven’t had a taste in quite some time. This looks like its going to be one of a couple of fav’s. for myself and my Mrs. Thanks!

Zucchini Bread


1 3/4 cup. flour
2 eggs beaten slightly
3/4 cup sugar
1 tsp. salt
1 tbls. vinallia
1 tbls. cinnamon
1/4 tsp. baking powder
1 cup. shreded zucchinni
Add rasins, 1tsp. nutmeg, chopped pecans,or walnuts to your liking. None if you prefer

Mix flour, sugar,baking powder,salt,and cinnamon. set aside. Beat eggs slightly, add sugar,vanilla,and zucchini. Add to dry mix and blend until well mixed. pour into a loaf pan and bake at 350’ for 50 minutes, or until knife comes out clean. Enjoy!!!
